Lime Out Floating Taco Bar Opening New Location in Lindbergh Bay, St. Thomas in November 2025

Lime Out, a floating taco bar that first opened in Cruz Bay, St. John, in 2018 is now planning to open a new location this November (2025) in St. Thomas, USVI.

Lime Out quickly became one of the world’s top water-party destinations, attracting visitors from around the globe to enjoy tacos, cocktails, and island vibes, all from a unique floating bar.

Co-founder Chelsea Baranowski noted that the original location has served nearly a million tacos, making an expansion to St. Thomas a natural next step.

Details On The New Lime Out Location in St. Thomas

Lime Out 2 is targeting an opening by November 2025, just in time for the winter tourist and cruise ship season. The new floating Lime Out restaurant will be anchored in Lindbergh Bay, St. Thomas, just offshore from Emerald Beach. Like its St. John sister spot, it will only be accessible by boat. The structure will measure 53 feet by 16 feet and include 10 moorings for visiting vessels.

Lime Out 2 Plans To Be Eco-Friendly

The below environmental safeguards designed to protect marine life and water quality were a major part of the legislative approval process for opening up the new Lime Out location in St. Thomas, USVI:

  • Solar power will run the restaurant.

  • Reverse osmosis systems will provide fresh water with minimal discharge.

  • Food prep and dishwashing will happen onshore to reduce wastewater.

  • Eco-friendly toilet systems will use sealed hazmat-safe bags as backup.

  • Wastewater tanks must be emptied at approved facilities daily.

  • Helix anchors (instead of concrete blocks) will minimize seafloor damage.

Lime Out St. Thomas To Source Food Locally

The owners already buy microgreens from Coral Bay Organic Farm and Garden Center (Josephine’s Greens) and plan to expand sourcing fresh produce from St. Croix and St. Thomas farmers, which supports the USVI’s agriculture sector.
